This Week's Menu

Tuesday: Ham, twice-baked potatoes, salad
Wednesday: Chicken Stroganoff, sweet potatoes
Thursday: Alfredo Sauce, Stew meat, noodles or baked potato, salad
Friday: Hamburgers, salad, fruit
Saturday: Ham, twice-baked potatoes
Sunday: Meatloaf, baked potatoes, green beans

(We have a huge bag of potatoes to eat up! a starchy week ahead)

Chicken Stroganoff (From Aimee)
6 (4 oz.) Skinless, Boneless Chicken Breasts Halves
1 (10 oz.) Can 98% Fat Free Cream of Chicken Soup
16 oz. Fat Free Sour Cream
1 (1 oz.) Envelope Lipton Onion Soup Mix

Spray crockpot with non-stick cooking spray. Place frozen chicken breasts in
bottom of crockpot. Combine Soup, Sour Cream and Onion soup mix. Pour over
chicken. Cook on low for 7 hours. Divide evenly and serve over rice or noodles
for additional points.

Serves: 6
Per Serving: 237 Calories; 4g Fat (16.0% calories from fat); 29g Protein; 19g
Carbohydrate; 1g Dietary Fiber; 81mg Cholesterol; 1073mg Sodium. Exchanges: 0
Grain (Starch); 3 1/2 Lean Meat; 0 Fat. WWP: 5

Week 29/30 Menus

I didn't post menus last week, but here's the plan for the rest of the week:

Tuesday-Meatloaf, Mashed Potatoes, salad
Wednesday-Cheesy Crockpot Chicken, noodles, vegetable

Saturday-Crockpot Chicken and Stuffing, Yams
Sunday-Crockpot Cheeseburgers, baked fries, salad

The Orange Chicken I posted a couple weeks ago? AWFUL. We all hated it. It was just too sweet.

I bake my potatoes in the crockpot. I scrub them, dry them off, pierce them, wrap them in Reynold's foil wraps--**love** these things, I find them at my dollar store, and throw them in the crockpot. Low, 8-10 hour. High about 4 hours. To us, they taste just like oven-baked.

Thursday: Cola Ham, Scalloped Potatoes (Betty Crocker), salad
Friday: Crockpot breakfast, bacon, salsa
Saturday: Leftover Ham, Scalloped Potatoes, salad
Sunday: Hamburgers, baked fries, salad

Breakfast:
Kellogg's Complete (bran flakes) and Fiber One

Lunch:
tuna salad, sandwiches, mini pizzas (made with sandwich thins or 1-pt English muffins)
salads, baby carrots

Snacks:
fruit: apples, bananas, etc., breakfast cookies

Menu Planning Week 25?

I've lost track of what week I'm on, and it would be too easy to count using my sidebar. lol I think we're on week 25. I'm a day early on my menu, but we're in desperate need of a grocery store visit. Might as well get the whole week's worth!

In no particular order, these are the dinners we will have this week:

1. Roast, mashed potatoes, vegetables (hubby's request--he said I know you don't like it, but could we? Sure.)

2. Crockpot cheeseburgers, baked fries, vegetable or salad

3. Meatloaf, mashed potatoes, vegetables

4. Steamed chicken, rice and vegetables

5. Crockpot chicken and dumplings

6. Cola chicken, rice, salad

7. Baked ziti, mock French bread, salad

8. Tuna Helper, vegetable, salad (yeah, I know, but my son loves it.)

9. Crockpot potato casserole

Menu Planning Week 22

Week 22 Menu

I buy ingredients for all items, but we pick what we want each night.

1) Spaghetti, sauce with veggies blended in & TVP, bread, salad
2) Leftover Spaghetti, etc. (I'm still not used to cooking less and we always have leftovers! This time I'm planning for it.)
3) Chicken, brown rice, salad
4) Burgers, cottage cheese, peaches--just for fun. My parents did this diet in the 70s and I learned to love that combo.
5) Tuna salad subs, tomato soup, salad
6) Mexican night (refried beans, ground beef crumbles, etc.)
7) Sweet and sour chicken, brown rice, vegetable

Lunches: Focusing on salads and fruit more (well, I'm going to try to) and tuna salad this week.
Breakfast: Bran flakes and Fiber One

Snacks: Fruit, air-popped popcorn, breakfast cookie

We made the switch to brown rice. The flavor is fine, but it is so dry! I need help cooking it because we don't want to switch back to white rice.


Surgery Night: ?? Wondering what I'll want to eat. Worried about food that day as I should get out by noon, and we'll have an hour drive home. I may be starved from fasting or I may just be tired. I'm thinking bland stuff, but kind of clueless. Ideas?

4-Egg McMuffins, hash browns, fresh fruit
5-Crockpot creamy Italian chicken, brown rice, salad
6-Burgers, baked fries, salad, fresh fruit

Breakfast: the usual (Kellogg's Complete and Fiber One)
Lunch: Sandwiches, salad, fresh fruit, sometimes baked chips
Snacks: fresh fruit, air-popped popcorn, Fiber One cottage cheese

6-Hot Dogs*, Baked Chips, Salad, Cantaloupe
7-Burgers, Baked Beans, Fresh Corn on the Cob, Salad, Cantaloupe

(In no particular order!)


Fruit: Apples, Cantaloupe, Bananas, Will pick up a watermelon

Snacks: Fruit, Ice Cream Sandwiches, Frozen Pretzels, Salad

Lunches: Sandwiches (tuna and deli meat, I just can't eat tuna daily), fruit, sometimes baked chips, salad

Breakfast: Kellogg's Bran Flakes and Fiber One Cereal, 1% Milk

*My boys like regular hot dogs, I've been picking up Hebrew 97% Fat Free Hot Dogs for me. Hubby doesn't like those as he thinks they are too garlicky.

I did things backwards this week. I went to the grocery store last night and just kind of "winged it." That means no new recipes to try, but our same, maybe boring, but safe standbys.

Menu Planning Week 16

I'm a day behind, a grocery store run behind. Thankfully we went out to eat last night!

1-Taco Bell night, our last :(
2-Crockpot Cheeseburgers...yes, again. Love 'em, have tons of burger to use up
3-Spaghetti, Salad, Mock French Bread
4-Italian Chicken, Brown Rice, Salad
5-Steaks, Baked Potatoes, Salad (whatever steak is left in the freezer)
6-Steamed Chicken, Brown Rice, Salad

We made the switch from white to brown rice. I was dreading that, thinking it would taste awful. Wow, was I pleasantly surprised! It's actually good.

We are really getting in a rut, and I need to go through my recipes and spice things up a bit. Will do when I have more time.

Lunches: sandwiches, salads
Snacks: Apples, breakfast cookies, popcorn, baby carrots

I am really enjoying salads now. I always have one after I work out--it's a healthy food reward.

1-Crockpot Cheeseburgers--yes, again! Love 'em!

3-meatloaf, mashed potatoes, gravy, salad

4-cola chicken, rice, salad

5-Italian chicken, noodles, salad

6-Nachos (refried beans, Baked Tostidos, hamburger crumbles for hubby, lettuce, nacho cheese in a small amount)

7-Taco Bell 2 weeks left of our Taco Bell night

Not all in order, but what I will buy for.

Sandwiches and salads for lunch, fruit for snacks, same old stuff that I always eat--and am happy doing so. lol

1) Crockpot Cheeseburgers, baked fries, salad
This time I'm going to make this with half burger half TVP. We all love this, so it will be a weekly thing! (I have tons of burger to use up in the freezer!)

2) Cheesy Crockpot Chicken, Noodles, Salad

3) Crock Pot Chicken & Dumplings, Salad

4) Spaghetti with TVP in the sauce, salad, French bread and corn--hubby has to have corn with spaghetti

5) Roast, mashed potatoes, gravy with pumpkin pie for dessert

6) Omelets and hash browns

7) Taco Bell night. These nights are numbered as our obedience class will end in a couple weeks and we don't have a Taco Bell where I live.


Sandwich and salad for lunch every day.

snacks: breakfast cookies, pretzels, apples, popcorn, baby carrots, tomato juice, V-8, sugar-free jello, bananas

I have had this on our menu many times and I've yet to actually make it! DH usually grabs the burger and grills it for himself. lol

Snacks:
cinnamon toast, frozen pretzels, peaches, baby carrots, jello, V8, breakfast cookies

Lunches:
alternating tuna salad sandwiches, lunch meat sandwiches, baby carrots, Fiber One cottage cheese, chips if desired, fruit

Breakfasts:
Kellogg's Complete and Fiber One, 1% milk, Splenda

Friday: Creamy Italian Chicken, veggie
Saturday: Mexican Night (beans and taco meat, lettuce and tomaotes--will make either burritos, nachos or tacos. Everyone gets what they want this way.)

I have everything in my house! Woo-hoo. I just need to get fresh salad/veggies/fruit and probably milk during the week.

I am going to eat a small baked potato every day at lunch to boost my potassium. I clean the taters, wrap them in foil, and throw them in my small crockpot. They come out just like oven-baked. Easy-peasy.

Will also drink 2 servings of tomato juice daily. Working on adding grape juice as well. Lots of sugar and salt, but also lots of good things, too.

Lunches every day will be tuna salad. We're stocked up on tuna as we hit a good sale, and it boosts my Omega-3. Plus, I like it. ;-)

Sunday: Italian Chicken, noodles, veggie

Lunches: This week, tuna. I don't like fish, but I need to incorporate more fish. So tuna it is.

Snacks: I bought lots of fruit at the store. I need to up my fruit a bit. (And veggies, but I'll work on that next week.)

I use Manwich for Sloppy Joe's, but always looking for homemade recipes!!
The Stovetop chicken recipe is an oldie, and I have not re-checked points.

Somewhere recently on the net I saw a crockpot cheeseburger recipe (not the soup) and now I can't find it again. Does anyone have that?

As I stated in an earlier post, my vacation does not mean going off plan. I have a list of restaurants in the town I'm vacationing in. I'm well prepared, and I will choose what to eat out depending on my craving and points available. Will probably hit Subway for lunch, will definitely take my own cereal pre-weighed, and some snacks.
